  • First fermentation takes place in new oak barrels (5–6 times usage), no malolactic conversion to preserve freshness.

  • Lees stirring follows, with barrel ageing for about 10 months.

  • Blended from two vintages, then further aged on lees in bottle for approximately 5–9 years.

  • It’s produced in an Extra‑Brut style (~2.5 g/L dosage).
