Crafted in Oregon by Ransom Spirits in collaboration with historian David Wondrich, this Old Tom Gin is resurrected from a 19th-century recipe. It begins with a malted barleyâbased wort, combined with corn spirit infused with six botanicalsâjuniper, orange peel, lemon peel, coriander seed, cardamom pods, and angelica root. These components are coâdistilled in a copper pot still. The select âheart of the heartsâ distillate is then aged 3â6 months in barrel before bottlingâresulting in the first American Old Tom Gin since Prohibition.Â
